Prepare the Base
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned. Drain excess fat.
- Stir in the black beans, corn, taco seasoning, and salsa. Cook for an additional 5 minutes, stirring occasionally.
Assemble the Casserole
- In a greased 9x13 inch baking dish, layer half of the tortilla quarters, followed by half of the beef mixture.
- Repeat the layers, finishing with the remaining tortilla quarters on top.
- Sprinkle the shredded cheddar cheese evenly over the top.
Bake
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let it cool for 5 minutes before serving. Top with sour cream and green onions if desired.
